Rich Creamy Salmon Florentine Recipe

Ingredients
  

Salmon
  • 4 pieces salmon fillets (skin-on or skinless, about 6 oz each)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 2 cups fresh spinach (baby spinach works best)
  • 1 cup heavy cream (or half and half for a lighter version)
  • ½ cup grated parmesan cheese
  • 1 teaspoon dijon mustard (optional, for depth)
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon fresh lemon juice, to brighten (about 1 teaspoon)

Method
 

  1. Season salmon with salt and pepper. Sear in a skillet with olive oil and butter until golden, about 4–5 minutes per side. Remove and set aside.
  2. In the same skillet, sauté garlic until fragrant, then add spinach and cook until wilted, about 2 minutes.
  3. Reduce heat and stir in heavy cream, Parmesan, Dijon mustard, and red pepper flakes. Simmer until sauce thickens, 3–4 minutes. Add lemon juice, salt, and pepper to taste.
  4. Return salmon to skillet, spoon sauce over, and simmer 2–3 minutes. Serve with pasta, rice, or bread.

Notes

For a lighter version, substitute half and half for heavy cream.
