Ingredients
  

olive oil
  • 2 tablespoons olive oil
meat
  • 1 pound Italian sausage, casings removed
vegetables
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium butternut squash, peeled and cubed about 4 cups
liquids
  • 4 cups chicken broth
spices
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
greens (optional)
  • 1 cup kale, chopped optional
acid
  • 1 tablespoon apple cider vinegar

Method
 

  1. Heat olive oil in a large pot. Cook sausage until browned, about 5-7 minutes.
  2. Add diced onion and cook until softened, 3-4 minutes. Stir in garlic and cook 1 minute.
  3. Add squash, broth, thyme, oregano, salt, and pepper. Simmer 20-25 minutes until squash is tender.
  4. If using kale, stir in during last 5 minutes. Remove from heat and add vinegar.
  5. Adjust seasoning and serve hot.
