Method
- Heat olive oil in a large pot. Cook sausage until browned, about 5-7 minutes.
- Add diced onion and cook until softened, 3-4 minutes. Stir in garlic and cook 1 minute.
- Add squash, broth, thyme, oregano, salt, and pepper. Simmer 20-25 minutes until squash is tender.
- If using kale, stir in during last 5 minutes. Remove from heat and add vinegar.
- Adjust seasoning and serve hot.
