Method
- Heat olive oil in a large pot, cook sausage until browned. Drain excess grease.
- Add diced onion, cook 3–4 minutes, then stir in garlic for 30 seconds.
- Add potatoes and chicken broth, season with salt, pepper, and thyme. Bring to a boil, then simmer 15–20 minutes until potatoes are tender.
- Stir in cream and cheese (if using), simmer 5 minutes without boiling.
- Ladle into bowls, garnish with parsley or green onions, and serve warm.
Notes
For a thicker soup, mash some potatoes before serving.
