  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced (russet or Yukon gold)
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried thyme or Italian seasoning
  • 0.5 cup shredded cheddar cheese (optional)
Garnish
  • Fresh parsley or green onions for garnish

Method
 

  1. Heat olive oil in a large pot, cook sausage until browned. Drain excess grease.
  2. Add diced onion, cook 3–4 minutes, then stir in garlic for 30 seconds.
  3. Add potatoes and chicken broth, season with salt, pepper, and thyme. Bring to a boil, then simmer 15–20 minutes until potatoes are tender.
  4. Stir in cream and cheese (if using), simmer 5 minutes without boiling.
  5. Ladle into bowls, garnish with parsley or green onions, and serve warm.

Notes

For a thicker soup, mash some potatoes before serving.
