Ingredients
  

Protein
  • 1 pound boneless, skinless chicken breasts
  • 1 cup wild rice, rinsed and drained
Vegetables
  • 1 medium onion, diced
  • 2 diced carrots
  • 2 stalks celery
Aromatics
  • 3 cloves garlic, minced
Broth & Seasonings
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 0.5 teaspoon black pepper
  • 1 cup heavy cream
Salt to taste

Method
 

  1. Place chicken in slow cooker with rice, vegetables, garlic, broth, and seasonings.
  2. Cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked and rice is tender.
  3. Shred the chicken, return to the soup, stir in heavy cream, and season with salt.
  4. Cook for 30 minutes on low, then serve hot garnished with parsley.
