Ingredients
  

Protein
  • 2 pounds boneless, skinless chicken thighs
Vegetables
  • 4 carrots carrots, sliced
  • 3 potatoes potatoes, diced
  • 1 onion onion, chopped
  • 3 cloves garlic, minced
Liquids
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

  1. Heat olive oil in a skillet and brown the chicken thighs.
  2. Transfer chicken to slow cooker, add vegetables and seasonings, then pour in broth.
  3. Cook on low for 6-8 hours, then stir in peas and shred chicken before serving.

Notes

For a thicker stew, mash some potatoes before serving.
