  • 1.5 lbs boneless, skinless chicken breasts cooked and shredded
  • 10 ounce frozen spinach thawed and squeezed dry
  • 14 ounce artichoke hearts drained and chopped
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese divided
  • 0.5 cup grated Parmesan cheese divided
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • to taste Salt and pepper
  • 6 ounces croutons crushed
  • 0.25 cup melted butter

Method
 

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine chicken, spinach, artichoke hearts, mayonnaise, sour cream, 1/2 cup mozzarella, 1/4 cup Parmesan, garlic powder, onion powder, salt, and pepper in a bowl.
  3. Mix well to combine.
  4. Pour mixture into a greased 9x13 inch baking dish.
  5. Combine crushed croutons, melted butter, remaining mozzarella, and remaining Parmesan in a separate bowl.
  6. Sprinkle crouton mixture over the chicken mixture.
  7. Bake for 20-25 minutes, or until golden brown and bubbly.
  8. Let stand for 5-10 minutes before serving.

Notes

For a creamier casserole, add 4 ounces of cream cheese to the chicken mixture.
