Method
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned.
- Add diced onion and minced garlic; cook until softened.
- Stir in diced peppers, tomatoes, tomato sauce, water, broth, and spices. Bring to a boil.
- Reduce heat and simmer for 20 minutes. Add rice and cook until tender, about 10 minutes.
Notes
For a vegetarian version, substitute ground beef with lentils or plant-based meat.
