Ingredients
  

Meat
  • 4 to 5 lbs beef short ribs
  • to taste Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup red grape juice (optional)
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Method
 

  1. Season short ribs with salt and pepper. Sear in hot oil until browned, then transfer to crockpot.
  2. Sauté onions in the same skillet until softened, then add garlic and cook briefly.
  3. Mix in broth, juice, soy, Worcestershire, tomato paste, sugar, paprika, thyme, and rosemary; simmer briefly.
  4. Pour sauce over ribs, add bay leaves, and cook on low for 8-10 hours until tender.
  5. Remove ribs, reduce sauce if desired, then serve with sauce spooned over.

Notes

For extra flavor, let the sauce reduce before serving.
