- Season short ribs with salt and pepper. Sear in hot oil until browned, then transfer to crockpot.
- Sauté onions in the same skillet until softened, then add garlic and cook briefly.
- Mix in broth, juice, soy, Worcestershire, tomato paste, sugar, paprika, thyme, and rosemary; simmer briefly.
- Pour sauce over ribs, add bay leaves, and cook on low for 8-10 hours until tender.
- Remove ribs, reduce sauce if desired, then serve with sauce spooned over.
