Ingredients
  

Protein
  • 1 lb pounds boneless, skinless chicken breasts cut into bite-sized pieces
Sauce
  • 1/4 cup cups sweet chili sauce
  • 2 tablespoons tablespoons soy sauce
  • 1 tablespoon tablespoon rice vinegar
  • 1 teaspoon teaspoon cornstarch for thickening
Vegetables
  • 1 cup bell peppers, sliced
  • 1 cup snap peas
Other
  • 2 tablespoons tablespoons vegetable oil

Method
 

  1. Heat oil in a skillet over medium heat and cook chicken until browned and cooked through.
  2. Add bell peppers and snap peas; sauté for 3-4 minutes until tender.
  3. In a bowl, mix sweet chili sauce, soy sauce, rice vinegar, and cornstarch.
  4. Pour sauce over chicken and vegetables; cook for another 2-3 minutes until thickened.
  5. Serve hot over rice or noodles.

Notes

For a spicier version, add extra chili flakes to the sauce.
