Ingredients
  

Oil
  • 1 teaspoon olive oil
Ground Beef
  • 1 lb ground beef
Vegetables
  • 1 cup onion (chopped) (1 medium onion)
  • 0.5 tablespoon garlic (minced) (about 4 cloves)
Canned Goods
  • 1 can diced tomatoes with green chiles 14 oz can
  • 1 quart beef broth (low or no salt)
  • 1 teaspoon paprika
  • 0.5 teaspoon black pepper
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
Beans
  • 1 can black beans (drained & rinsed)
  • 1 can pinto beans (drained & rinsed)
  • 1 cup frozen corn (thawed)

Method
 

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned.
  2. Add chopped onion and minced garlic; cook until softened.
  3. Stir in diced tomatoes, beef broth, and spices; bring to a boil.
  4. Add beans and corn; reduce heat and simmer for 20 minutes.
