Method
- Preheat oven to 450°F (230°C).
- Mix salt, pepper, garlic, rosemary, thyme, and olive oil to create a rub.
- Rub the mixture all over the prime rib and let it sit at room temperature for 30 minutes.
- Place the roast in the oven and cook for 20 minutes, then reduce temperature to 325°F (160°C) and roast for about 1 hour 30 minutes, until internal temperature reaches 130°F (54°C).
- Remove from oven, tent with foil, and let rest for 20 minutes before slicing.
Notes
Use a meat thermometer for best results and let the meat rest before carving.
