- Set the Instant Pot to sauté and heat the olive oil. Add diced onion and garlic; cook until fragrant.
- Add diced tomatoes, vegetable broth, and all chopped vegetables. Season with Italian seasoning, salt, black pepper, and paprika.
- Close the lid, set to pressure cook for 10 minutes, then quick release.
- Open the lid, stir in the cooked macaroni and spinach, and cook on sauté for 2-3 minutes until heated through.
- Serve hot, topped with grated Parmesan and chopped parsley if desired.
