  • 1 can diced tomatoes (15 oz) or 4 fresh tomatoes, diced
vegetable broth
  • 32 oz vegetable broth
elbow macaroni pasta
  • 1/2 cup elbow macaroni pasta
cannellini beans
  • 1 can cannellini beans (15 oz) drained
celery stalks
  • 2 stalks celery stalks (3/4 cup chopped)
carrots
  • 2 carrots carrots (3/4 cup chopped)
zucchini
  • 1 zucchini zucchini (3/4 cup chopped)
chopped spinach
  • 2 cups chopped spinach
italian seasoning
  • 2 tsp italian seasoning
salt
  • 1 tsp salt (or to taste)
crushed black pepper
  • 1/4 tsp crushed black pepper (or to taste)
paprika
  • 1 tsp paprika (to taste)
parmesan cheese
  • 1/4 cup parmesan cheese, grated (optional)
chopped parsley
  • for garnish chopped parsley

Method
 

  1. Set the Instant Pot to sauté and heat the olive oil. Add diced onion and garlic; cook until fragrant.
  2. Add diced tomatoes, vegetable broth, and all chopped vegetables. Season with Italian seasoning, salt, black pepper, and paprika.
  3. Close the lid, set to pressure cook for 10 minutes, then quick release.
  4. Open the lid, stir in the cooked macaroni and spinach, and cook on sauté for 2-3 minutes until heated through.
  5. Serve hot, topped with grated Parmesan and chopped parsley if desired.
