Ingredients
  

Vegetables
  • 2 medium carrots
  • 1 medium yellow onion
Garlic
  • 4 cloves garlic
Lentils and Broth
  • 2 cups dried red lentils about 1 pound
  • 3 tablespoons olive oil
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 0.5 teaspoon kosher salt
  • 1 can (15-ounce) tomato sauce
  • 6 cups broth chicken or vegetable
Spinach
  • 5 cups baby spinach about 5 ounces

Method
 

  1. Peel and dice carrots and onion; mince garlic.
  2. Rinse lentils; set aside.
  3. Sauté vegetables in olive oil; add spices and cook until fragrant.
  4. Add lentils, tomato sauce, and broth; simmer until tender, 18-22 minutes.
  5. Stir in spinach until wilted; serve hot.
