Vegetable Soup Recipe (Seriously The Best!)

Ingredients
  

Vegetables
  • 2 tablespoons olive oil
  • 1 large chopped onion
  • 3 cloves garlic, minced
  • 3 carrots peeled and diced carrots
  • 3 stalks celery, diced
  • 4 cups vegetable broth
  • 2 cups diced tomatoes (canned or fresh)
  • 1 cup green beans, cut into 1 inch pieces
  • 1 cup cubed potatoes
  • 1 cup peas (frozen or fresh)
  • 2 cups chopped spinach or kale
  • 1 teaspoon dried thyme
  • 1 bay leaf bay leaf
  • to taste Salt and pepper
  • 1/2 cup corn kernels (optional)

Method
 

  1. Heat olive oil in a large pot over medium heat, then cook the chopped onion until soft (3-4 min).
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in carrots and celery; cook for 5 minutes.
  4. Pour in vegetable broth and diced tomatoes, then add green beans, potatoes, and peas. Simmer for 20 minutes until vegetables are tender.
  5. Stir in spinach or kale, thyme, bay leaf, and season with salt and pepper. Add corn in last 5 minutes if desired.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
