Method
- Heat olive oil in a large pot over medium heat, then cook the chopped onion until soft (3-4 min).
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in carrots and celery; cook for 5 minutes.
- Pour in vegetable broth and diced tomatoes, then add green beans, potatoes, and peas. Simmer for 20 minutes until vegetables are tender.
- Stir in spinach or kale, thyme, bay leaf, and season with salt and pepper. Add corn in last 5 minutes if desired.
Notes
For extra flavor, add fresh herbs or a squeeze of lemon before serving.
