Veggie Orzo

Ingredients
  

olive oil
  • 2 tbsp olive oil
vegetables
  • 1 cup broccoli (chopped)
  • 1 cup carrots (finely shredded)
  • 2 tsp garlic (minced)
pasta
  • 1 cup orzo
liquids
  • 2 cups chicken broth
  • 1 oz cream cheese
  • 1/2 cup parmesan cheese

Method
 

  1. Chop broccoli into small pieces and shred carrots.
  2. Heat olive oil in a pot, sauté vegetables and garlic for 5 minutes.
  3. Add orzo and broth, bring to a boil, then simmer for 10-15 minutes.
  4. Stir in cream cheese and parmesan until melted and creamy.
  5. Let cool slightly before serving. Optional: serve with grilled protein.
