  • 1 lb beef stew meat
Broth
  • 2 cups beef broth
Liquid
  • 1 cup grape juice
  • 1 tbsp vinegar
Vegetables
  • 3 carrots carrots, sliced
  • 2 potatoes potatoes, cubed
  • 1 onion onion, chopped
  • 2 cloves garlic, minced
Seasonings
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf bay leaf

Method
 

  1. Brown beef in a large pot over medium heat.
  2. Add onion and garlic; sauté until softened.
  3. Stir in tomato paste, thyme, and bay leaf.
  4. Add grape juice and beef broth; bring to a boil.
  5. Add carrots and potatoes; simmer for 1.5-2 hours until tender.
  6. Season with salt and pepper; serve in bread bowls if desired.

Notes

Using bread bowls adds a fun, spooky touch to the presentation.
