  • 1 teaspoon olive oil
  • 1.5 pounds boneless, skinless chicken breasts or thighs Diced into 1 inch pieces
  • 2 teaspoons Italian Seasoning Divided
  • to taste salt and pepper
  • 0.5 cup diced carrots
  • 0.5 cup diced celery
  • 0.5 cup diced onions
  • 0.25 cup diced sundried tomatoes
  • 3 cloves garlic Minced
  • 0.25 cup flour
  • 2 tablespoons tomato paste Optional
  • 6 to 8 cups chicken broth Start with 6 cups, see notes
  • 6 oz pasta Italian small shells
  • 1 cup heavy whipping cream
  • 0.5 to 1 cup grated Parmesan Reggiano cheese
  • 2.5 to 3 cups fresh spinach

Method
 

  1. Cook chicken with Italian seasoning, salt, and pepper until browned, about 4-5 minutes.
  2. Add vegetables and garlic; cook until translucent, about 3-4 minutes.
  3. Stir in flour and tomato paste; gradually add chicken broth, whisking to prevent lumps.
  4. Add pasta and seasonings; simmer for 20 minutes until chicken is cooked and pasta is al dente.
  5. Stir in cream, spinach, and Parmesan; simmer for 5 minutes, then serve.

Notes

Adjust seasoning as needed and serve hot for best flavor.
