Ingredients
  

Canned Goods
  • 2 cans diced tomatoes
  • 1 small onion, chopped
  • 2 carrots chopped carrots
  • 2 cloves garlic, minced
  • 1 tbsp tomato puree
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp dried basil
  • to taste Salt and pepper
Garnish
  • as needed Fresh basil leaves

Method
 

  1. Combine tomatoes, onion, carrots, garlic, tomato puree, and broth in the crockpot. Stir in basil, salt, and pepper.
  2. Cook on low for 3-4 hours.
  3. Blend until smooth, then stir in heavy cream. Serve hot, garnished with fresh basil.

Notes

For a thicker soup, blend more thoroughly or add a bit of bread.
