Crockpot Tuscan Sausage Soup

Ingredients
  

Meat
  • 2 lbs ground mild Italian sausage cooked & drained
  • 2 large onions chopped
  • 6 cloves garlic minced
  • 2 tsp dried oregano
  • 1 cup sun-dried tomatoes drained & chopped
  • 12 cups chicken broth
  • 3 cups spinach chopped
  • 1.5 cups heavy cream
  • 0.5 cup Parmesan cheese for serving, freshly grated

Method
 

  1. Brown the sausage in a skillet, then drain excess fat.
  2. Add sausage, onions, garlic, oregano, sun-dried tomatoes, and chicken broth to the crockpot. Stir well.
  3. Cover and cook on low for 6–8 hours.
  4. About 30 minutes before serving, stir in spinach and heavy cream. Warm through.
  5. Serve hot with Parmesan cheese sprinkled on top.
