Ingredients
  

Broth and liquids
  • 4 cups organic chicken or veggie broth
  • 6 cups water
Vegetables
  • 3 stalks celery stalks, cut in half
  • 3 stalks carrot stalks, peeled and cut in half
  • 6 cloves garlic cloves, whole
  • 1 whole onion, yellow or white
Seasonings
  • 1 tsp salt
  • 1 tbsp chicken bouillon (optional)
Pasta
  • to taste Pastina, orzo, Ditalini pasta of your choice
Cheese
  • to taste Parmesan cheese

Method
 

  1. Combine water and broth in a stock pot and bring to a boil.
  2. Add vegetables, reduce heat, cover partially, and simmer for 45 minutes.
  3. Remove vegetables with a slotted spoon, blend with broth and chicken bouillon, then return to pot.
  4. Cook pasta separately, then add to broth and serve topped with Parmesan cheese.

Notes

This broth is great for boosting immunity and comforting during cold days.
