Ingredients
  

olive oil
  • 2 tbsp olive oil
Italian sausage (mild or spicy)
  • 1 pound Italian sausage
small onion, diced
  • 1 small onion diced
garlic cloves, minced
  • 5 cloves garlic cloves minced
Italian seasoning
  • 2 tsp Italian seasoning
oregano
  • 2 tsp oregano
chicken broth
  • 4 cups chicken broth
marinara sauce
  • 2 ½ cups marinara sauce
diced tomatoes
  • 1 can (14.5 oz) diced tomatoes
lasagna noodles, broken into pieces
  • 8 oz lasagna noodles broken into pieces
salt and pepper, to taste

ricotta cheese
  • 1 cup ricotta cheese
shredded mozzarella
  • 1 cup shredded mozzarella
grated Parmesan
  • ½ cup Parmesan grated
fresh basil, chopped (for garnish)
  • 2 tbsp fresh basil chopped, for garnish

Method
 

  1. Sauté the sausage: Heat olive oil, cook sausage until browned, 5-7 mins.
  2. Add onions and garlic: Sauté until translucent, then stir in Italian seasoning and oregano, cook 1 min.
  3. Pour in broth, marinara, and tomatoes; bring to a simmer.
  4. Add noodles and cook until tender, about 8-10 mins. Season with salt and pepper.
  5. Mix ricotta, mozzarella, and Parmesan cheeses. Serve soup topped with cheese mixture and basil.

Notes

For a richer flavor, let the soup simmer longer before serving.
