Ingredients
  

Marinade
  • 0.5 cup ranch dressing store-bought or homemade
  • 0.25 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried parsley or fresh, chopped
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 teaspoon lemon juice optional
  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
Skewers
  • wooden or metal skewers

Method
 

  1. Mix ranch, parmesan, olive oil, garlic, parsley, pepper, garlic powder, and lemon juice to make marinade.
  2. Marinate chicken in mixture for at least 30 minutes in the fridge.
  3. Thread chicken onto skewers, soaking wooden skewers in water if used.
  4. Preheat grill to medium-high. Grill skewers 10-15 minutes, turning occasionally, until cooked through.
  5. Remove from grill, let rest a few minutes, then serve garnished with parsley or parmesan.

Notes

Soaking wooden skewers prevents burning. Adjust marinating time for more flavor.
